Salumificio Frati

The pleasure of the ancient and everlasting flavours, enclosed in delicacies made by expert hands, following the artisan tradition. Sixty years in the business, three generations loyal to an ancient craft in which rigour and passion give birth to products that have never been altered in taste or quality. The excellence is guaranteed by the best pork meat, bred on the territory, fed with the best cereals, processed following the traditional agricultural knowledge of the Bassa of Parma, in a recently renovated, modern and functional laboratory.

In 1958 our family, Frati – Pongolini, undertook the path in the field of manufacturing and trade of fresh pork meat, cold meats, Parmigiano Reggiano, wines and many more delicious products to lighten up the table for every kind of occasion. Side by side with expert pork butchers and qualified shop assistants, three generations still live and work together: grandparents, daughter-in-law and three young nephews, still going on with tenacity and respect towards what was also built by the father, Roberto Pongolini, who perished prematurely.


Laboratory

We only work with pigs coming from Emilian breeding farms, fed with the best cereals such as corn, barley, wheat and bran, from which we obtain all of our typical cold cuts: Culatello, Fiocchetto, Parma ham, Coppa, Pancetta, Salame, Strolghino, Spalla Cotta… and also seasonal products such as Cicciolata, Ciccioli, Cotechino, Prete, Zampone and many more.

We firmly believe in short production chain. We cure the realization of every meat by hand, we also pay attention to the aging process that happens in our cellars, just like the tradition which we coupled with new technologies without altering the slow and natural aging process.

All our products are produced following the guidelines from European Community and sanitary rules, thanks to a recently built laboratory that utilizes alternative, ecological and renewable sources of energy thus respecting the environment.

Our delicatessen works weekly pork meat from selected pigs, bred on the territory. Every day the freshness of a just executed production, to perfection, to make special each part of the pig: loin, pork chop, sausages, filet, Coppa and Spalla’s roasts, ribs, feet, bones, rinds, meat skewers eccetera. On request for barbeque or special occasions we provide particular cuts of pork meat hard to find anywhere else.
