Particularly tasty, it is obtained from a boneless pork loin, salted and seasoned with salt, pepper and spices. A set of ten days is dedicated to the salting, then we proceed with the drying and the aging for at least 4/5 more months. Once sliced the slice is particularly lean and has a pinkish colour. It is identified thanks to its sweetness and original sapidity. It is a cold cut recommended for diets, also perfect once cut and served as appetizer on a platter of cold cuts.

How to use Ready for use
Aged Lombino can be stored for over 6 months in a cool and dry area.
Once cut it can be stored in the fridge for some weeks wrapped in a rag, we suggest covering the cut surface with a clear wrap. Slices must be stored in the fridge and eaten same-day.
